Healthy Lasagna

Ingredients:
• 12 oz. whole wheat lasagna noodles
• 8 oz. lean ground beef (90% lean or higher)
• 2 tbsp. olive oil
• 4 cups of marinara sauce (San Marzano tomatoes + olive oil + canola oil + garlic)
• 1 container part-skim ricotta cheese
• 1 beaten egg
• Pinch of salt, pepper, and nutmeg to taste
• 6 oz. part-skim mozzarella cheese
• 1/2 cup grated parmesan cheese

Preparation:
Preheat oven to 375 degrees F and cook the pasta al dente. Drain the pasta and lay the noodles out. Cook the beef using non-stick spray on a skillet until the beef is no longer pink. Make sure to break up the meat into small pieces. Add in half the sauce. In a medium bowl combine the ricotta cheese, egg, salt, pepper, and nutmeg. Evenly spread 1 cup of tomato sauce on the bottom of a baking dish. Place a layer of lasagna noodles on top, touching each other. Make sure they do not overlap. Spread half of the ricotta mixture on top of the noodles and add another layer of noodles on top. Add on half of the meat. Then, add on another layer of noodles, the remaining cheese mixture, more noodles, then the remaining beef and finally 1 more layer of noodles. Top the final layer of noodles with the remaining sauce, then cut up the mozzarella cheese and spread over the top layer of the noodles evenly. Sprinkle on the grated parmesan cheese as well. Cover with foil (loosely) and bake for 45 minutes. Take off the foil and bake for 15 more minutes.
