Grilled Chicken with Tomato and Eggplant Sauce
Ingredients:
• 1/4 Cup Olive Oil, 1/4 Cup Canola Oil
• Peeled Garlic Cloves
• 1/4 cup red wine
• 1 pound of lean 99% fat free chicken
• 3 cups San Marzano tomatoes
• Basil Leaves
• Pinch of Salt and Pepper
• 1 tbsp. Sugar
• 1/4 cup chopped onion
• 1 lb. eggplant
• 1/4 cup chopped onion
Preparation:
Marinate the chicken in olive oil. Sauté the Oil, garlic, salt and pepper in a pan for a few minutes. Add eggplant, mushrooms, and onions. Sauté for around 10 minutes until vegetables are softened. Add the sauce and the red wine in and let it simmer on low heat for 15 minutes while stirring. Grill the chicken. When cooked, throw the chicken in the sauce. Let the chicken soak in the sauce for 5 minutes on low-to-no-heat.
