Coconuts (through their oil) actually contain a very healthy form of fat called medium-chain triglycerides (MCT). Although MCTs are a form of saturated fat, they do have many unique qualities that are ideal for your body’s health. MCTs are absorbed directly by the liver so they burn similarly to carbohydrates, which can provide instant energy to endurance-based athletic events. Other fats, such as butter, contain long-chain fatty acids, which are deposited in fat cells and burn off more slowly.
