Super celery provides a host of nutrients which makes it a good choice for meals, snacks and fresh juice drinks. It is very high in both vitamin C and dietary fiber and also includes a good supply of vitamins B1, B2, B6, folic acid, calcium and potassium. Celery contains compounds called coumarins which are phytochemicals that enhance white blood cell activity used in fighting infections and cancer. Not to mention, celery is a food that you actually burn more calories digesting than the calories you take in from eating it.
