Cauliflower
Cauliflower is one of the cruciferous family superfoods, or “white” foods, which contains allicin, a nutrient that benefits heart health and helps to prevent strokes. It is also a good source of selenium and vitamin C which are important ingredients used for the strengthening of the immune system.
Folate is another key nutrient in cauliflower. This important element is necessary for the proper replication and growth of cells. Cauliflower also includes vitamin K, phosphorus and the trace mineral boron as well as being an excellent source of dietary fiber for maintaining colon health.
Studies have revealed that cauliflower, and all cruciferous vegetables, possess compounds which the body uses to fight cancer. These compounds prevent various enzymes from triggering agents within the body that cause cancer, and they increase enzymes which the body uses to negate and rid itself of cancer causing carcinogens.
