Buckwheat
Not only do roasted buckwheat cornels (or groats) have a pleasant nutty flavor, but they are also a nutritious food to add to a healthy diet. Buckwheat contains eight of the nine essential amino acids necessary for protein production and is especially high in lysine as well as Alpha-Linolenic Acid, a fatty acid necessary for good health. It is also a rich source of B vitamins, phosphorus, copper, magnesium, manganese, zinc and iron.
Buckwheat is a good source of dietary fiber, containing 4 grams in a 1-cup serving. It has also been found to lower blood pressure, reduce blood glucose levels and lower cholesterol. Buckwheat, which is actually considered a fruit seed, is a good substitute for grains due to it being gluten-free.
