Bok Choy
Bok Choy is appearing more commonly in supermarkets and for good reason. This Chinese white cabbage is packed with nutrients and is a great source of dietary fiber. Though found mainly in stir-fry dishes, this super vegetable has a mildly sweet flavor and can be added to a variety of stews, soups and other recipes for maximum consumption and health benefits.
The Asian wonder cabbage is great for aiding digestion and is full of vitamin A, vitamin C, beta-carotene and calcium. It’s low in fat, carbs and calories and also provides a modest amount of B6 and potassium.
Bok Choy is another superfood filled with antioxidants which protect your body from those nasty free radicals. It is a great provider of folic acid and iron and is believed to assist in preventing certain types of cancer.
